Indulge your taste buds in the warmth of homemade cinnamon muffins, a delightful treat that transcends breakfast or any other time of the day, into a flavorful experience. Ingredients:


- 1 cup (180gr) Brown sugar, I used coconut sugar


- 2 eggs


- 3 cups (360 gr.) Flour


- 150 ml oil


- 3 tsp Baking powder


- 1 tsp salt


- 1 tsp cinnamon


- 250 ml milk (can be plant-based, if you lactose intolerant like me)


- you could also use yogurt instead of the milk, if you do that use 250 grams (1 cup) of greek yogurt. The muffins will become even more fluffy


Directions:


1. Begin preheating the oven to 200 degrees Celsius (400 F)


2. Add all the dry ingredients, then all the wet.

3. Stir

4. Get a muffin tin, and add the muffin liners.

5. In a small bowl add the extra sugar with the cinnamon, stir.

6. Scoop the muffin dough in the muffin liner, add a little of the sugar mixture on top of the muffins. Put the muffin tins in the oven for 25 min. After this time check if they are cooked through, you can check this by sticking a tooth pick or a special cake tester.


7. Take the muffins out of the oven and while the are still hot, sprinkle the rest of the cinnamon/ sugar mixture on top of the muffins. Let them cool down a bit and enjoy.
